Boozy potatoes

Boozy Japanese potatoes
Serves 2

Got this from a Singaporean food website, shiokadelicious, which has been taken off the Internet.

Homey stuff that goes very well with rice, you’ll get a massive carb overdose but that’s what comfort food is all about.

2 medium-large potatoes
2 tbsp extra virgin olive oil
1 cup sake
2½ tbsp light soy sauce
1 tbsp butter


First
Bring water to boil. Scrub and peel potatoes, cut into 12 pieces. Add to boiling water and cook for 10 minutes, taking care not to overcook them. Drain.

Second
Heat oil in skillet or wok. Move potatoes so that they are all coated with oil. Saute till lightly browned. Pour in the sake. Cook on high heat for 5 mins, tossing and stirring the potatoes frequently. Season with soy sauce. Mix well so that the potatoes are evenly coated with sauce.

Third
Turn heat to low. Add butter, stir and cook for 5 mins until a crust forms on the potatoes.
