Cha-pa-lang omelette

Anything goes omelette
Serves one

Sometimes, I'm just too lazy to leave the house just to get some ingredients I don't already have. So what do I do? Rummage through the fridge of course, and suss out the stuff to use and what not.

"Cha-pa-lang" means anything goes in Singlish, and this is perfect bachelorette food. Nutritious, too.

Drizzle of olive oil
2 eggs
½ onion, sliced.
Tomato, sliced.
Mushrooms, sliced.
Peas
Salt and black pepper to taste
½ cup freshly grated Parmesan cheese, if desired

First
Pour a little olive oil into the frying pan, then cook the sliced onions until they caramelise and turn almost translucent.

Second
Add tomatoes and the rest of the ingredients. Then add the eggs, salt and pepper. Add some cheese, if you want.
This is a bit like a frittata, which it could probably be, if you add more eggs.

Third
Serve with toast.
