Limoncello
Makes 2 litres
1 litre of vodka, preferably 70 per cent
11 ecologically-grown lemons (unwaxed)
1 litre of water
700g sugar
First
Peel the lemons carefully, making sure that you only get the yellow part and
no white. Put it in a bowl, and cover with the vodka. Cover with plastic wrap
or a towel and let stand at room temperature for five days. Stir the mixture
once in a while.
Second
After five days, remove the lemon peel. Bring water and sugar to a boil, and
let it cook for ten minutes to make syrup. Cool completely.
Third
Combine sugar syrup with the alcohol and filter through a coffee filter into
clean bottles. Let the mixture stand to develop flavour for a month, then
serve chilled.
