Meat sauce
Japanese/Chinese meat sauce
Serves 4
It’s a simple recipe that goes over noodles and rice, and you can adjust
how you want the pork to be flavoured. This is comfort food for me, especially
during winters abroad when you eat it all steaming hot with udon noodles.
You can add cubes of tofu, use different sorts of meat and mushrooms, and
it is still as yummy.

2 tablespoons vegetable oil
200g minced pork
4 fresh shiitake mushrooms, stalks removed, finely chopped
6 spring onions, finely chopped
2 tablespoons sake or Shaoxing wine
2 tablespoons soy sauce
First
Heat the oil in a wok or large frying pan over high heat.
Second
Add the pork and chopped mushrooms. Stir-fry for five minutes before adding
the spring onions.
Third
Add the sake/wine and soy sauce to the wok. Stir well, then serve over noodles
or rice.
