Miso Chicken
Grilled miso chicken breasts
Serves 4
Yummy with rice and some white wine such as Gruner Veltliner or Riesling.

1½ cup tbs red miso paste
2 tbs sake
1 tbs mirin
2 teaspoons soya sauce
4 large chicken breasts, about 500g, skin intact
Shredded shiso or green basil leaves for garnishing
1 lemon, cut into wedges to serve (optional)
First
Combine miso, sake, mirin and soya sauce in a medium bowl. Add chicken, toss
to coat well and set aside to marinade for one hour or refrigerate overnight.
Second
Pre-heat grill. Transfer chicken pieces onto lightly greased tray skin side
up. Place under the grill and cook for 10-12 minutes on high heat or until
cooked through and browned, turning once during cooking.
Third
To serve, cut finger-width slices and transfer onto a serving plate. Garnish
with leaves and lemon wedges on the side.
