Raspberries Romanoff
Serves 3-4
From M.F.K. Fisher’s An Alphabet For Gourmets.

1 pint (0.5l) carefully sorted raspberries
1½ cups heavy cream
¼ cup powdered sugar
¼ cup kirsch
First
Chill berries. Beat cream stiff, gradually adding sugar and kirsch. Mix lightly
with berries.
Second
Chill thoroughly, serve in tall thin glasses, with thin unsugared wafers.
