Salmon, rice, mushrooms

Steamed salmon rice with mushrooms
Serves 4

So easy to make! It's perfect bachelor/student food. Serve with steamed veggies on the side.

6 dried shiitake mushrooms.
500ml (2 cups) boiling water
2 cups uncooked Japanese rice
2 tbs soya sauce
3 tbs sake
3 tsp rice vinegar
½ tsp salt
70g (½ cup) thinly-sliced leek, soaked in water
200g (7 oz) salmon fillets, cleaned, with skins removed
4 tsp mirin
2 basil or shiso leaves, shredded
Nori, lightly toasted and cut into thin strips, to garnish
Roasted sesame seeds to garnish

 

First
Place shiitake mushrooms into a bowl, cover with 500ml boiling water and soak for 10 mins. Drain, remove excess liquid, remove stalks and slice thinly. Reserve soaking liquid.

Second
Wash the rice and place into a rice cooker with soya sauce, sake, rice vinegar, salt and 500ml of reserved shiitake liquid. Stir to combine. Place salmon, leek and mushrooms on top of the rice. Cook.

Third
Sprinkle with mirin and flake salmon with fork. Add shiso and combine. Serve topped with nori and sesame seeds.
