Spaghetti

Spaghetti in tomato sauce
Serves 4

This is a simple, homey dish that’s easy to whip up for a quick dinner. You can use other herbs if you like, it adds to the sweetish-sour flavour of the tomatoes.

4 handfuls spaghetti
2 tbs olive oil
1 garlic clove, peeled and chopped
1 tin plum tomatoes
½ tbs thyme
salt and pepper
grated cheese

First
Warm the oil in a frying pan. Put in the chopped garlic and let it fry for a moment without taking colour. Add the tomatoes and the thyme. Bubble the mixture up, turn down the heat, and let it stew gently, uncovered. Taste and add salt and pepper

Second
Cook spaghetti.

Third
Drain and toss with a little extra oil. Tip spaghetti and tomato sauce into a bowl and mix. Serve on hot plates, with the cheese handed separately.
