Irish Stew

Irish beef stew
Serves 4

If you can boil water, you can make a stew. This is a bachelor dish I got off one of my guy friends. I like the slightly bitter taste of Guinness in this dish, and it is simple enough to cook: just throw everything into the pot.

Olive oil
500g beef cut into chunks
6 cloves garlic, finely chopped
6 cups beef stock
1 cup Guinness stout
2 tablespoons tomato paste
1 tablespoon sugar, 1 tablespoon worcestershire sauce
2 bay leaves
500g potatoes, 2 large carrots, 1 large onion

First
Heat enough olive oil to cover the bottom of your pot. When hot, brown the beef on all sides. Then add the minced garlic and stir till fragrant. Throw in the beef stock, guinness, tomato paste, sugar, worcestershire sauce, and bay leaves. Cover and bring to boil.

Second
While waiting, wash and peel the potatoes and carrots and slice into chunks. Slice the onion thinly. When the pot is boiling, add the vegetables, cover and return to boil.

Third
Simmer covered for one hour, stirring occasionally. Remove the cover and simmer for an additional 40 minutes, to allow some water to boil off and stew to thicken. Serve with a baguette or over a bed of rice.
