Stuffed salmon
Salmon stuffed with spinach and sun-dried tomatoes
Serves 2
2 fresh salmon fillets
fresh baby spinach
sun-dried tomatoes
feta cheese
1 lemon
basil
salt
pepper
First
Preheat the oven to 200 deg C (400 deg F). Chop up the spinach finely before
you wash it as it’s more difficult to cut wet. Wash the spinach and
throw in the sun-dried tomatoes.
Second
Put salt and pepper on the fillets, and cut a deep slit through the fish.
Stuff them with the spinach and tomatoes and some feta cheese.
Bake for around 15 mins. Squeeze fresh lemon juice over the fillets, cut the
rest of the lemon and lay it on the plate with the basil.
